I thought it might be nice for us to share some of our special Christmas cooking recipes?

I will start off with one of my tried and true favourites smile

APPLE RICE STUFFING.

*Heat 1 Tablespoon of oil in a fry pan and cook one small chopped onion until soft.

*Add 175gms of chopped bacon and fry until browned.

*Transfer onion and bacon to a bowl and add 1 1/2 cups of cooked rice,two small peeled and chopped apples, 1/3 cup of slivered almonds,2 tablespoons of chopped sage and 1 egg.

*Mix well, season with salt and pepper to taste.

*Ideal to use to stuff any poultry.

Salsas are very popular in this house, here are a couple that you might like to try.

Fresh Mango Salsa

*2 mangoes diced
*1/2 small red onion finely diced
*1 teaspoon chopped red chilli
*2 tablespoons of chopped coriander
*1-2 tablespoons of lime juice to taste.

Place mango, onion,chilli and coriander into a bowl, drizzle with lime juice and stir and serve chilled.

*This mango one is fantastic served with leg ham.

*************************************

Tomato Salsa

*4 ripe tomatoes
*1/2 small white onion finely chopped
*1 clove garlic crushed
*1 tablespoon of lemon juice
*1 tablespoon of olive oil
*1/4 cup of chopped parsley
*Tobasco sauce to taste.

Cut the tomatoes in half and remove the seeds,dice the flesh and combine in a bowl with the onion, garlic,lemon juice and oil.  Sprinkle in Tobasco sauce to taste and season with salt and pepper.

*I love this served with chicken

What a great idea for a thread Crazy.

Here are some recipes I found that children could help to make for Christmas. All from the good old BBC web site as usual. smile

And in case your child doesn,t actually like roast turkey, here is an alternative Christmas dinner.
turkey meatballs
rudolph baked potatoes These actually have a red nose on them lol.

Martin they are ones I have been using for years and thought others might like to try them although I think salsas might be more of a summer time dish

Here is another nice easy one for festive entertaining....

CHEESY CHICKEN BALLS

500G CHICKEN MINCE
1 ONION FINELY CHOPPED
1/2 CUP BREAD CRUMBS
1/2 CUP GRATED CHEESE
1 EGG LIGHTLY BEATEN
1/4 CUP CHOPPED CORIANDER
SWEET CHILLI SAUCE TO SERVE

*Preheat oven to 180degrees celcius

*Line tray with baking paper

*Place all ingredients except chilli sauce in a large bowl and season well with salt and pepper

*Using clean hands mix well and roll into 20 small balls and place on tray

*Bake for 30 mins turning after 15 mins

*Serve and enjoy with sweet chilli sauce.

Cheesy chicken balls? Now you have my attention! What kind of Christmas dinners do you normally do Cat? Do you do a main meal of Turkey etc, or lots of smaller dishes as your recipes suggest?

Sally ..no these recipes were more for holiday entertaining than Xmas Day itself.

As it is usually close to 35 degrees celcius on Xmas Day in my part of the world, we usually opt for a cold lunch.

We would have a large smorgasbord kind of meal with things such as:

Roast Turkey
Roast Chicken
Potato Salad
Green Salad
Pasta Salad
Potato Bake
Leg of Ham
Fresh prawns, crabs and lobster
Rice salad

Fresh bread sticks

Plum Pudding/cream/custard
Alternative ice cream plum pudding
Pavlova fresh cream and mango and passionfruit
Homemade fruit salad

Rum balls
Shortbread

Tea, coffee, soft drinks, champagne

I think that is just about it for this year smile

I remember spending Christmas day in Sydney back in 2001. Nothing like spending the day on the beach with a BBQ going. Great stuff!

cool smile Yay for the Aussie Xmas grin .. My Chrissie this year will be in the stinking hot and humid Airlie Beach, tropical Queensland, on a big shady porch beside the pool with friends.. Bring it on! I’ve printed off some of these fantastic recipes to take up there with me, thank you. Eat, drink and be merry with the ones you love!
